Passage One
Reebok executives do not like to hear their stylish athletic shoes called footwear for yuppies. They contend that Reebok shoes appeal to diverse market segments, especially now that the company offers basketball and children's shoes for the under-18 set and walking shoes for older customers not interested in aerobics or running. The executives also point out that through recent acquisitions they have added hiking boots, dress and casual shoes, and high-performance athletic footwear to their product lines, all of which should attract new and varied groups of customers. Still, despite its emphasis on new markets, Reebok plans few changes in the up market retailing network that helped push sales to 1 billion annually, ahead of all other sports shoe marketers. Reebok shoes, which are priced from 27 to 85, will continue to be sold only in better specialty, sporting goods, and department stores, in accordance with the company's view that consumers judge the quality of the brand by the quality of its distribution. In the past few years, the Massachusetts-based company has imposed limits on the number of its distributors (and the number of shoes supplied to stores), partly out of necessity. At times the unexpected demand for Reebok's exceeded supply, and the company could barely keep up with orders from the dealers it already had. These fulfillment problems seem to be under control now, but the company is still selective about its distributors. At present, Reebok shoes are available in about five thousand retail stores in the United States. Reebok has already anticipated that walking shoes will be the next fitness-related craze, replacing aerobics shoes the same way its brightly colored, soft leather exercise footwear replaced conventional running shoes. Through product diversification and careful market research, Reebok hopes to avoid the distribution problems Nike came across several years ago, when Nike misjudged the strength of the aerobics shoe craze and was forced to unload huge inventories of running shoes through discount stores.

Passage Two
California is a land of variety and contrast. Almost every type of physical land feature, sort of arctic ice fields and tropical jungles can be found within its borders. Sharply contrasting types of land often lie very close to one another. People living in Bakersfield, for instance, can visit the Pacific Ocean and the coastal plain, the fertile San Joaquin Valley, the arid Mojave Desert, and the high Sierra Nevada, all within a radius of about 100 miles. In other areas it is possible to go snow skiing in the morning and surfing in the evening of the same day, without having to travel long distance. Contrast abounds in California. The highest point in the United States (outside Alaska) is in California, and so is the lowest point (including Alaska). Mount Whitney, 14,494 feet above sea level, is separated from Death Valley, 282 feet below sea level, by a distance of only 100 miles. The two areas have a difference in altitude of almost three miles. California has deep, clear mountain lakes like Lake Tahoe, the deepest in the country, but it also has shallow, salty desert lakes. It has Lake Tulainyo, 12,020 feet above sea level, and the lowest lake in the country, the Salton Sea, 236 feet below sea level. Some of its lakes, like Owens Lake in Death Valley, are not lakes at all: they are dried up lake beds. In addition to mountains, lakes, valleys, deserts, and plateaus, California has its Pacific coastline, stretching longer than the coastlines of Oregon and Washington combined.

Passage Three
Centuries ago, man discovered that removing moisture from food helps to preserve it, and that the easiest way to do this is to expose the food to sun and wind. In this way the North American Indians produce pemmican (dried meat ground into powder and made into cakes), the Scandinavians make stockfish and the Arabs dried dates and "apricot leather".
All foods including water --- cabbage and other leaf vegetables contains as much as 93% water, potatoes and other root vegetables 80%, lean meat 75% and fish, anything from 80% to 60%, depending on how fatty it is. If this water is removed, the activity of the bacteria which cause food to go bad is checked.
Fruit is sun-dried in Asia Minor, Greece, Spain and other Mediterranean countries, and also in California, South Africa and Australia. The methods used vary, but in general, the fruit is spread out on trays in drying yards in the hot sun. In order to prevent darkening, pears, peaches and apricots are exposed to the fumes of burning sulfur before drying. Plums, for making prunes, and certain varieties of grapes for making raisins and currants, are dipped in an alkaline solution in order to crack the skins of the fruit slightly and remove their wax coating, so as to increase the rate of drying.
Nowadays most foods are dried mechanically. The conventional method of such dehydration is to put food in chambers through which hot air is blown at temperatures of about 110°C at entry to about 43°C at exit. This is the usual method for drying such things as vegetables, minced meat, and fish.
Liquids such as milk, coffee, tea, soups and eggs may be dried by pouring them over a heated steel cylinder by spraying them into a chamber through which a current of hot air passes. In the first case, the dried material is scraped off the roller as a thin film which is then broken up into small, though still relatively coarse flakes. In the second process it falls to the bottom of the chamber as a fine powder. Where recognizable pieces of meat and vegetables are required, as in soup, the ingredients are dried separately and then mixed.
Dried foods take up less room and weigh less than the same food packed in cans or frozen, and they do not need to be stored in special conditions. For these reasons they are invaluable to the climbers, explorers and soldiers in battle, who have little storage space. They are also popular with housewives because it takes so little time to cook them. Usually it is just a case of replacing the dried-out moisture with boiling water.
